I felt challenged but now that I\u2019ve discovered almond meal, I felt I could make anything!<\/em><\/p>\n<p><em>When I posted my accomplishment on Facebook, Kim Mitchell commented that she had a recipe for sugar-free low carb cheesecake and voila, today was the perfect day to try it. And it was amazing\u2026just like the Tiramisu! Except for the bain marie, it wasn\u2019t as difficult as I thought it would be.<\/em><\/p>\n<p><strong><em><img loading=\"lazy\" decoding=\"async\" style=\"display: inline; border-style: initial; border-color: initial; border-width: 0px;\" title=\"New York Cheesecake\" src=\"https:\/\/zarada.net\/wp-content\/uploads\/2011\/08\/NYCheesecake.jpg\" alt=\"New York Cheesecake\" width=\"520\" height=\"352\" border=\"0\" \/> <\/em><\/strong><\/p>\n<p><strong><em>Makes 8 servings<br \/>\n<\/em><\/strong><\/p>\n<p><strong><em>Nutritional Information:<br \/>\n<\/em><\/strong>Each serving has 2 grams effective carbohydrate plus 1 gram fibre, 6 grams protein, and 221 calories.<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>500gms Philadelphia cream cheese (room temperature)<br \/>\n1\/4 cup whipping cream or sour cream<br \/>\n3 eggs (preferably room temperature)<br \/>\n1 tsp vanilla<br \/>\n1 tsp lemon juice<br \/>\n1\/2 cup Sweet &amp; Low artificial sweetener or liquid equivalent<\/p>\n<p><strong><br \/>\nFor the Crust:<\/strong><\/p>\n<p>1 cup almond flour<br \/>\n2 tbsp melted butter<br \/>\n1 tbsp Sweet &amp; Low artificial sweetener or liquid equivalent<\/p>\n<p><strong><br \/>\nPREPARATION<\/strong><\/p>\n<p>Pre-heat oven to 190 C.<\/p>\n<p>Combine all the ingredients for the crust, and press into the bottom of the small 6\u201d spring form pan using a small glass.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"display: block; float: none; margin-left: auto; margin-right: auto; border: 0px;\" title=\"The cheesecake base before I baked it\" src=\"https:\/\/zarada.net\/wp-content\/uploads\/2011\/08\/Cheesecakebase.jpg\" alt=\"The cheesecake base before I baked it\" width=\"393\" height=\"591\" border=\"0\" \/><\/p>\n<p>Bake for 8 to 10 minutes, until fragrant and beginning to brown. Remove and lower the oven heat to 175 C.<\/p>\n<p>Put the cream cheese in the food processor and process until fluffy. Add other ingredients, scraping the bowl each time. When all ingredients are combined, scrape one more time, beat one more minute, and pour the mixture into the pan over the crust.<\/p>\n<p>Wrap the bottom and sides of the spring form pan in foil, put it in a baking pan and pour boiling water around the sides. Bake at 175 C for 60 minutes, checking often. When the cake is firm to touch but slightly soft in the centre, remove from the oven.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"display: inline; border-style: initial; border-color: initial; border-width: 0px;\" title=\"Cheesecake in springform\" src=\"https:\/\/zarada.net\/wp-content\/uploads\/2011\/08\/Cheesecakeinspringform.jpg\" alt=\"Cheesecake in springform\" width=\"520\" height=\"393\" border=\"0\" \/><\/p>\n<p>Cool the cheesecake still inside the pan. When completely cool, remove the sides and chill the cake in the fridge for 2 &#8211; 3 hours.
