It added punch to almost any mild curry dish they served at the restaurants! Then we asked for it to be served with our breakfast..it was great with eggs and sausages. I joked with one of the waiters that we wanted the recipe and he said \u201cSure! I\u2019ll ask the chef and a couple of days later we were given the recipe by Chef Virjanan.<\/em><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"border-right-width: 0px; display: inline; border-top-width: 0px; border-bottom-width: 0px; border-left-width: 0px\" title=\"Rougaille Sauce Recipe\" border=\"0\" alt=\"Rougaille Sauce Recipe\" src=\"https:\/\/zarada.net\/wp-content\/uploads\/2011\/02\/IMG_04941.jpg\" width=\"520\" height=\"393\" \/> <\/p>\n<p><em>We haven\u2019t tried the sauce yet but I will soon.<\/em><\/p>\n<p><strong><img loading=\"lazy\" decoding=\"async\" style=\"border-right-width: 0px; display: inline; border-top-width: 0px; border-bottom-width: 0px; border-left-width: 0px\" title=\"Rougaille Sauce\" border=\"0\" alt=\"Rougaille Sauce\" src=\"https:\/\/zarada.net\/wp-content\/uploads\/2011\/02\/SF0332741.jpg\" width=\"520\" height=\"436\" \/> <\/strong><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>2 kgs fresh tomato, chopped<\/p>\n<p>300 gms onion, chopped<\/p>\n<p>3 tsp chopped garlic and ginger paste<\/p>\n<p>2 chopped chilli \/ cumin and mustard seed<\/p>\n<p>50 gm fresh coriander, chopped<\/p>\n<p>50 gms thyme<\/p>\n<p>2 pieces dried chilli<\/p>\n<p>100 gm curry leaves \/ fenugreek seed<\/p>\n<p>25 ml oil<\/p>\n<p>5 cardamom<\/p>\n<p>3 cloves<\/p>\n<p>2 cinnamon stick<\/p>\n<p>2 star anise<\/p>\n<p>Salt and pepper to taste<\/p>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<p>In a thick bottomed pan, heat oil and fry dried ingredients. Add the onions and allow to sweat. Add the ginger garlic paste and fry a while.<\/p>\n<p>Add the thyme, curry leaves and chilli.
